坐月餐 Chinese Confinement Recipes - #12 Hokchiew red yeast wine chicken (Soup) 福州红糟鸡 (汤)
Ingredient:
1 whole kampong chicken (chop Into desire piece)
1 old ginger (best to get wen dong ginger)
Sesame oil
Approx 350 ml Red Rice Wine
Salt / light soy sauce if doing confinement
Methods:
1) slices ginger and heat up the sesame oil fry till fragent
2) Add in chicken and fry , add in rice wine and fry till half cooked
3) add in 2000ml water and fry till chicken almost cooked , simmer add in seasoning to taste
4) Boil for 4 - 5 hours till chicken cooked
5) served hot.
