ALMOND CRISP / 杏仁瓦片 / TUILE AMANDE (USING AIR FRYER)



Ingredients:
2 large egg white (about 64g each with shell)
50g plain flour
60g castor sugar 
30g butter (melted)
100g almond flakes 
1/8 tsp vanilla essence (optional)
1 pcs cream cracker mashed to powder(my Secret recipe) hehe… 
adding cream cracker will smell nicer
Preparation:
– Separate egg white and yolk.
– Sieve plain flour twice.
– Melt butter
– Mash cream cracker
Methods:
Whisk egg white with a hand whisk until you see white bubbles. Add in sugar and beat until the sugar dissolves.
Add in flour and mix till lump-free.
Fold in 1/2 quantity almond flakes and cream cracker until well-combined.
Stir in melted butter and mix well.
Spoon mixture on the baking tray. Spread out into a round shape or any other shapes you like using a spoon. 
Sprinkle the remaining flakes. 
Bake at 170°C for 8-10 minutes or until golden brown.
Remove & leave to cool and then store into an air-tight container.

Pandan Chicken (Deep fried)





Pandan Chicken (Deep fried)
Ingredients:
  • Pandan leaves
  • skinless and boneless chicken breast cut into cubes
  • sesame seeds
  • soy sauce
  • oyster sauce
  • sesame oil
  • white pepper powder
  • sugar
  • fish sauce
  • fresh ginger (grated and squeezed the juice)
Method:
  1. Mix the chicken pieces with all the seasonings as mentioned above.
  2. Add the ginger juice and marinate and place in fridge for at lease 1 hour.
  3. Put chicken and wrap
  4. Deep fry until the golden brown.
  5. Dish out and serve hot.

yogurt curry drumlet (Baked or Air fry)


Yogurt curry drumlet


Ingredient:
- 6 drumlet or wings
- 2 tbsp plain yogurt
- 1 tbsp curry powder
- 1 tbsp light soy sauce

Method:
1) Mixed all together marinate for at lease 2 hours or overnight
2) baked or air fried 200degree C 25 mins and turn and bake again 25mins

Soy milk MOCHI CHEESE PUFFS (PÃO DE QUEIJO)
Ingredients:
1 large egg
1/3 cup olive oil
2/3 cup soy milk if you like original you can replace it to milk
1 1/2 cups | 170 gr tapioca starch
50 g mozzarella / cheddar cheese
50 g parmesan cheese
1 – 2 tsp salt (Optional)
Add toppings if you like into the batter I add chocolate chips

Method:
1. Preheat oven to 200 deg C.
2. Put all ingredients in a blender stir till well combined.
3. Blend mixture till smooth.
4. Baked it at 200 deg C. at 15 – 20 mins

I always enjoy eating mala steamboat and went to my nearby wet market I went to the frequent dried food store telling the uncle that I would like to try HDL yes you heard me HDL (Hai Di Lao) always billed $200 for 2 pax min

The next week the uncle really source the paste for me haha.... Purchases at $5 went home straight away cook soup using it

Hubby and I always in love with mala soup we will never go to a steamboat without ordering mala we will order 1 spicy 1 non spicy for the kids but if the kids are not eating we would order 1 whole pot full of spicy

Hubby in the first place does not fancy mala I am the only one eating and he will eat the non spicy , after he went Taiwan for a business trip he came back he went crazy over mala hahaha...

Back to HDL paste the paste is not overly spice and not over spicy it is just nice but i would like it to be spicy this is suitable for beginner if you like mild mala this is a good choice

This paste is available in various supermarket too price around $5+ to $6

There are a few other flavours too like tomatoes but not to my liking it sour ,would like to try the chicken broth looks not bad 

This paste is worth buying if you do not intend to spend hundreds of $ just for quality service

Soup base very nice it's herbal style not peppery kind like the teochew I like teochew style very much but this is the only place I will go for herbal because the soup is not overpowering with the herbs.

Be perpared to wait for tables during lunch and dinner hours service is fast the chef cooks fast we only waited like 10 mins the food was serve.

Spend around $17+ for 2 pax Adult and 2 Child value for $ indeed the braised pork trotters is a must order very soft they really take the effort to cook and braised it long enough

Its a must try dish if you are considering having a pot of bak kut teh during a raining day :-)

Bangkok - Baiyoke sky hotel

Went there on the 01 Oct - 04 Oct 2013 it's a yearly trip to bring my daughter around so she can experience different places she can lean something different living in Singapore.

At that time I was having a Bun in the Oven lol #2 is on the way :-)

Traveling with hubby , my girl and my mil at that moment was not heavily pregnant therefore I am still okay to travel and my morning sickness does not happen at all it just went away? lol

Stayed in Baiyoke Sky Hotel suite because mil is bunking with us so we need bigger space extra bed it place in the hotel room

To our surprise the room is bigger than my 3 room flat lol... it's so huge! large living space, large room , big bathroom

Honey & Abalone Sauce Wings


If you like those wings sold in hawkers stall this is one you can try this is juicy and yummy suitable for adults and kids 

Great for snacking away while watching tv I can finish up all 6 wings , my family loves eating chicken wings especially my daughter 

Abalone sauce can be found in supermarket in Singapore 

Honey & Abalone Sauce Wings


Ingredients

6 mid wings or 6 pcs 3 joint wings

2 tbsp   Abalone Sauce

1 tbsp ginger juice

2 tsp garlic powder

1 tbsp honey

Method:

1) Marinate wings at lease 2 hours or overnight

2) Deep fried in hot oil till Browns

Or if you like to bake it instead fry for healthy version


3) Baked it 15 mins 200 degree and turn side and bake 200 degree 10 mins

Steam Pork Ribs (Hong Kong Style) very very simple


Steam Pork Ribs (Hong Kong Style)

Ingredients

1 packet of Seah's brand Steam Pork Rib Spices (Hong Kong Style) I bought from wet market
500g Pork Ribs
5 tbsp water

Method

1. Marinade pork ribs rub evenly with spices , add water
2. Steam pork ribs for 20 mins in steamer or put in rice cooker steam with rice



Buffalo wings



Buffalo wings (Deep fried or baked)

Ingredients

10 drops Tabasco sauce I add 20 I like it more spicy :-)

oyster sauce
*marinate overnight…*
cooking oil
chicken wings

Method:

1) Heat cooking oil deep fried marinated chicken wings
2) Serve hot

MILO CHERRY RAISINS ALMOND BISCOTTIS

Ingredient:

1 cup plain flour
1 cup Self Rising flour
1/4 cup milo powder
3/4 cup sugar
3/4 cup dried cherry
3/4 cup dried raisins
3 tbsp almond flasks
3 eggs

Method:

1) Mixed all ingredients well
2) knead dough on floured board
3) divide dough, roll into long dough and flatten
4) baked in pre-heated oven 200 degree 15 mins , cooled
5) cut diagonal and baked again 150 degree 20mins


Self creation Tau pok tau kwa pau 自创豆卜豆干包


Self creation Tau pok tau kwa pau 自创豆卜豆干包


Ingredient:

10 tau pok cut half
1 tau kwa deep fried cut into cube
10 fresh prawns cut into cubes

 Sauce:

30g tamarind paste with 100 ml water mixed and remove seeds
2 tbsp shrimp paste 
2 tbsp sambal paste 
150gm castor sugar

Egg floss: 

2 eggs beaten 
5 tbsp cooking oil

Method:

1) boil prawns till cooked , set aside 
2) heat oil add in beaten egg and use a chopstick just swirl around , fry till crisp set aside
3) mixed tamarind juice with shrimp paste and sambal and castor sugar will sugar dissolve 
4) take tau pok stuff in prawns and tau kwa and air fry or baked 5 mins 200 degree 
5) top with crisp egg floss and shrimp paste sauce 

* sauce can be use for rojak*

Pineapple Fried Rice


Pineapple Fried Rice
Ingredient:

1 can pineapple cut into cube
5 tbsp pineapple juice from can
3 cup rice (wash and cooked refrigerated overnight or minimum 2hrs)

Turmeric Paste Mixed together

1 tbsp turmeric powder
2 tbsp abalone sauce / oyster sauce
15 prawns (remove shell cut )
Mixed veg (Optional)

dash of salt

Topping:

Fried Egg
Fish / Pork Floss

Optional Topping:

Cashew nuts
raisins


Method:

1)Fry prawns and pineapple , Mixed veg (Optional)
2) Add in rice fry, add paste fry till evenly covered
3) Add topping
