Steam chicken essence fish 鸡精蒸鱼 

Ingredients:

- 1 Pomfret fish
- 1 bottle chicken essence
- 1 thumb ginger sliced
- salt to taste
- 1 tsp sesame oil

Method:

1) Wash and Clean fish 

2) Put sliced ginger on top of the fish and inside *may stir fry till fragrant*  add sesame oil and dash of salt

3) Steam fish for 15 mins or till cooked 

4)Warm chicken essence and pour chicken essence on the fish

Japanese Korokke (Croquette) コロッケの作り方

Ingredients:

- 4 egg
- 1kg potato
- 250g (7oz) minced pork or any minced meat you desire
- 250g (7oz) onion
- 3 tbsp. butter


Part 1


- 1tsp. salt
- black pepper powder

Part 2


- flour
- beaten egg
- Panko (bread crumbs)
vegetable oil for frying

Optional :Mayonnaise

Vegetable  

Directions:


1) Cook eggs till hard boiled and mince them. 


2)  Peel and cut potatoes into chunks, Boil Potatoes until soften. Drain and mash them while they are hot.

2. Mince the onion and saute with butter until soften. Add minced pork fry until cooked. Season with Part 1.


3. In a large bowl mixed the mashed potatoes, chopped minced eggs,  onion & meat mixture


4. Divide them into equal portions.


5. Make into oval patties. Coat them with flour, dip them beaten egg, and coat with panko.


6. Fry them in oil until cooked golden brown.


7. Serve hot with mayo and veg if desire

坐月餐 Chinese Confinement Recipes - #10 Herbal Chicken Soup (2) (药材鸡汤) 

Ingredient:

- 1 Kampung Chicken (Chop into piece)
- 60g Yu Zhu (玉竹) 
- 12g Bei Qi (北芪 )
- 6 piece Dang Shen (当参) 
- 6 piece Huai San (淮山)
- 30g Wolfberries (枸杞子)
- 12g cordyceps (虫草)
- 15 pieces Red dates (红枣)
- 3 liter water
- Salt to taste (Optional)

Method:

1) Boil water in slow cooker and put all the herb in

2) Blench the Kampung chicken and put in the water

3) Slow cook for at lease 3 hours or more

Deep Fried Chicken Easy version



Deep Fried Chicken (2 recipes)

Recipe 1:

Ingredient: 

Chicken Chop in desire size

Oil for deep frying

egg for coating (Beaten) + 1 cup milk

Flour Mixture (Mix together)

1/4 tsp Garlic Powder

1/4 tsp Onion Powder

1/4 tsp Chicken stock powder

1/4 tsp Paprika Powder
1/2 cup Plain flour

Dash of salt and pepper


Method:

1) Coat chicken to beaten egg mixture and coat with flour mixture

2) double coat it again the 2 steps so that it will have the coating outside the chicken

3) Deep fry till golden brown

Crsipy Enoki Mushroom

Oh this is my favorite Snack...whenever i visited Goldenmile will pop by the stall opposite selling deep fried pisang but sometimes it close early :p

So to satisfy my craving i make my own version

Ingredient:

3 pack enoki mushroom

4 tbsp flour

4 tbsp rice flour

1 tbsp corn starch

dash of pepper

1 tsp chicken stock powder

Water

oil for deep frying

Method:

1) add all the flour and starch and pepper plus chicken stock powder mixed well with water enough to make thick batter

2) Cut off the bottom of the enoki mushroom dip in batter

3) Heat oil, take the batter coated mushroom drip off excess and deep fried till golden brown

Ingredient:
1 cup self-raising flour
1 cup milk
1 egg
3 tbsp castor sugar (optional if you adding butter and honey / syrup omit as it will be too sweet)
1 tsp vanilla essense
Food colouring
Method:
1) Mixed all (excpet vanilla essense and Food colouring) in a bowl till smooth batter
2) Divide all in equal potion
3) add colouring
4) Lightly grease the pan with oil or butter or cooking spray.
5) scope batter onto pan cook until bubbles shown on the surface and the edges start to go dry.
6) Turn and cook the other side till brown

Bacon Prawns

Ingredients:

10 Prawns (Remove shells left the tail)

10 pcs Bacon

10 toothpick

Method:


1) Roll bacon on prawns and use toothpick to secure it

2) Air fry or baked 200 degree 15 - 20mins

Ingredient:

250gm Tapioca Starch / flour

250gm butter soften

80gm icing sugar

80 gm plain flour

Method:

1) Beat butter and sugar till light and fluffy

2) mixed in Tapioca Starch / flour and plain flour mixed well

3) Add in coloring if you like you may also divide batter into equal quantiy and mixed in different coloring

4) Bake at 200 degree for 10 to 15 mins

Ingredient


- 1 bunch broccoli (Boil till soft and mash it)

- 200g salmon (Poached it and flake it)

- 250g fish paste

- 2 tbsp corn starch

- Dash of salt and pepper

- corn starch for coating

- Oil for deep frying

Method: 

1) Mixed mashed broccoli , salmon flakes , fish paste and 2 tbsp corn starch , salt and pepper

2) Take 1 tbsp and coat with corn starch and deep fry till golden brown

My kids loves this soup can you imagine a toddler and a baby liking spicy soup ? lol

My girl always told me that she like the soup tickle her tummy she likes the feeling... okay she is cute... :-)

Ingredient:

- 1 Pig maw cut into strips can purchase  cooked pig maw in supermarket

- 1 can button mushroom

- 2 pack enoki mushroom

- 1 pack peppery spice pre packed

- 10 clove garlic

- 3000ml water 

Seasoning: 

- 3 tbsp chicken stock powder

- salt to taste or light soy sauce to taste up to individual liking if you feel the stock powder had enough taste for the soup can omit this some ppl like more flavors :-)


Method: 

1) Wash and clean pig maw cut into strips

2) cut the mushrooms

3) in a slow cooker add water and spice pack in and all the ingredients  

4) Slow cook for 6 hours or more till pig maw is soft

Ingredient: 

1 Pack Instant noodles
1 egg
1 tsp light soy sauce

Equipment:

Round shape egg ring

Method:

1) Boil Noodle till soften
2) Cool noodle with tap water , drain dry
3) Beat egg and light soy sauce
4) Mixed noodle and egg mixture
5) Heat oil and put the egg ring add enough noodles to cover the hold leave for a few sec and take out the ring and turn the "noodle bun" fry till crisp 

** Add you own burger stuffing and sauce like meat patties , eggs, bacon , ham and veg **

My First winning prize in 2015 - PNKids Syrup

This is my first post that I ever won something humm maybe I never been lucky at all winning any prize :-)

Today I had received a message from Mums&Babies on FB saying that I had won the prize actually i missed out the first message but Mums&Babies blog owner is so kind to remind me again I am very grateful she choose me and given me a chance to collect the prize

I had arrange a collection today and she agreed to meet up so happy and head down and collect from her 


Happy to the max that I am able to receive it for my 2 kids giving them the goodness of the vitamin syrup 

I am finding a multi vit for my kids and just nice I am able to let them try this brand :-) 

Am a happy mommy looking forward to give them the yummy vitamin tomorrow 



Wow very big bottle wor! 250ml Yes i got boy option I had choose either one because i had both gender kids both are fine with me because i am consider blessed if I won it (but i never think i will win it)



Wow the toys so cute and 2 toys somemore! Super happy kids both of them are playing non-stop thank you for making my babies so happy Mums&Babies! :-)




My elder daughter want to pose with the gifts and syrup! Hehe... she love posing... asking me to snap a photo of her and even will check the photo if she look great in it haha... if she is happy with it i am approve to post it... lol...

Hokkchew Style Stir fry Sticky Rice Cake

Ingredient: 
- About 30 - 50 pcs Dried Sticky Rice cake (Soak for at lease 12 - 14 hours)

- Vegetable you like (Broccoli , scallion , cai xin or kai lan)

- 5 Dried mushroom (Soak till soften and cut to strips)

- 100gm minced meat

Seasoning: 

- 1 tnsp oyster sauce 

- 2 tsp light soy sauce

Method:

1) Heat oil in wok fry the minced meat

2) Add in Mushroom and Vegetable and fry

3) Add sticky rice cake add in 3 tbsp water

4) add in seasonings and fry till soften

WHITE COFFEE COOKIES 白咖啡饼干


WHITE COFFEE COOKIES 白咖啡饼干

Make: 50 cookies
Ingredients:
125g unsalted butter
80g icing sugar
1 egg
½ tsp vanilla extract / essence
160g plain flour
50g corn flour / Potato starch
1 pack 30g White instant coffee powder
Method:
(1) Let the butter turn soft at room temperature
(2) cream butter and icing sugar till light fluffy
(3) Beat in vanilla essence and egg will mixture turn creamy
(4) Add in coffee powder stir in till well combine
(5) Add in flour mixture in batches fold in until well combine
(6) Transfer the mixture into mini baking paper cups
(6) Bake in a Pre-heated oven at 180°C for 20-22 minutes
(7) Remove baking tray from the oven and transfer the cookies to a wire rack to cool completely. Then store them in an airtight container.

WINTER MELON TEA 冬瓜茶

Ingredient:
– 1kg Raw Winter melon
– 1 pack Chinese brown Sugar (pian tang in Mandarin)
– 4 liter water
Method:
1) Peel the skin, discard the seeds , Cut the melon into cube
2) Boil water and melt the brown sugar
3) Add in the melon boil in high flame 30 mins
4) Turn to medium and boil another 45 mins
5) Covered for 15 mins
6) Served warm / hot / cold
